About Julita E. Baker, Ph.D.
Julita has studied the microbiological, physiological, and behavioral effects of nutrition & food choice for over 2 decades, with her Ph.D. work focusing more specifically on convenient & palatable food choices on mindfulness and stress. She has funneled this combined experience into consulting & teaching food choice betterment and designing individualized food choice programs.
Julita received a Ph.D. from the University of California, Davis in Nutritional Biology after shifting from Microbiology working in the Microbial Ecology Program at the Joint Genome Institute. She has designed and taught courses at Stanford University and has been a Nutrition Consultant and Health Educator for organizations such as Kaiser Permanente, San Francisco start-ups, and entrepreneurs.
She is currently a Nutrition Consultant for weight loss at LeanMD, and Advisor for Ample Foods, and she consults on an individual basis. In these roles, she collaborates, translates complex nutritional and behavioral science into actionable tools, and educates on these topics.
Aspiring to spark new ways of thinking in nutrition, she hopes to bridge the gap between evidence-based science and practicality. You'll likely find her combing through the scientific literature, researching and educating about nutrition and health. She loves to inspire folks to jump out of preconceived health notions, and cares deeply to help people live to their full potential.
Julita first found her curiosity in science, and much of her nutrition intrigue, growing up in Poland. With her parents having immigrated to the US at her age 2, she lived with her grandparents for 5 years before she and her sister joined them. During this time, she was able to learn from her grandmother as she grew her own vegetables, tended to chickens, and each day prepared dinner with an intention that can only be felt. Watching and learning from her grandmother was pivotal to her life. She learned the importance of simplicity, appreciation for food, and most importantly, that having more food choices is not necessarily correlated to better health. She's since combined and utilized these observations with research in the pursuit of helping others make value-aligned food choices.
If Julita is not teaching, researching, & translating science, you'll likely find her running, competitively and recreationally. She finds that running not only serves as a parallel narrative to her scientific endeavors, but is also one of the main daily moments when research thoughts come together and insight reveals itself.

Julita is a Nutrition Consultant, Speaker, Writer, and Educator who translates and communicates the most relevant research into practical and usable approaches to Food Choice betterment. She incorporates scientific evidence from Nutrition, Psychology, Neuroscience, and Consumer Behavior to help people align their current food choices with their long-term goals, values, and life vision.

With a passion for running, Julita enjoys helping running brands and is an ambassador to Double Road Race & Destination Racing (use codes "DoubleRunner" for Double Road Race and "DRAMBBAK" for Destination Racing for discounts on races!). She is also an ambassador for Heart Rate Variability for training, which she uses on a daily basis.
Julita is coached by world-class triathlete and Elite runner: Jake Shoemaker.
